  • 1 tablespoon freshly grated ginger
  • 3 stalks green onions, thinly sliced
  • 2 tablespoons rice wine or mirin
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons toasted sesame seeds
  • Optional: 1 teaspoon Korean chili flakes (gochugaru)

Instructions

  1. Prepare the marinade: In a medium bowl, whisk together soy sauce, brown sugar, toasted sesame oil, minced garlic, grated ginger, sliced green onions, rice wine or mirin, black pepper, and Korean chili flakes if using. This should take about 5 minutes.
  2. Marinate the short ribs: Place the thinly sliced beef short ribs in a large glass or stainless steel bowl. Pour the marinade over the ribs, tossing to coat evenly. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight, but no longer than 24 hours.
  3. Toast the sesame seeds: While the ribs marinate, toast the sesame seeds in a dry skillet over medium heat until golden and fragrant (about 3-4 minutes). Set aside.
  4. Heat the grill or grill pan: Preheat to medium-high heat. For charcoal grill, let coals burn down to an even hot bed. For grill pan, preheat for at least 5 minutes.
  5. Cook the ribs: Remove ribs from marinade, letting excess drip off. Grill ribs for about 3-4 minutes per side until nicely charred and cooked through but still juicy inside. Avoid overcrowding the grill.
  6. Rest and garnish: Transfer ribs to a serving platter, sprinkle with toasted sesame seeds and extra sliced green onions. Let rest for 5 minutes before serving.
