  • ½ cup sour cream (full-fat recommended)
  • ⅓ cup vegetable oil or melted coconut oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour (can substitute half with whole wheat)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • ½ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using a box or handheld grater into a medium bowl. Do not squeeze out the moisture.
  3. In a large bowl, beat the eggs, sour cream, vegetable oil, and vanilla extract until smooth and creamy.
  4. Add granulated sugar and brown sugar to the wet mixture and mix until sugars dissolve and batter looks glossy.
  5. In a separate bowl, sift together the flour, baking soda, baking powder, salt, and cinnamon.
  6. Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. Do not overmix.
  7. Fold in the grated zucchini and chocolate chips until evenly distributed.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 55-60 minutes, checking doneness with a toothpick inserted in the center; it should come out clean or with moist crumbs.
  10. If the top browns too quickly, tent with foil halfway through baking.
  11. Let the bread cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.
