A quick and easy homemade treat combining moist zucchini, rich cocoa, and melty chocolate chips for a tender, chocolatey bread perfect for any occasion.

  • ⅓ cup unsweetened cocoa powder (35 g)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar (150 g)
  • ½ cup packed brown sugar (110 g)
  • ½ cup vegetable oil (120 ml)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup sour cream (120 g) (can substitute Greek yogurt or coconut yogurt for dairy-free)
  • 2 cups shredded zucchini (about 2 medium zucchinis), loosely packed
  • 1 cup semi-sweet chocolate chips (175 g)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan well or line it with parchment paper.
  2. Shred the zucchini using a box grater or food processor. If watery, gently squeeze out excess moisture with a clean kitchen towel.
  3. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  4. In a separate bowl, beat the granulated sugar, brown sugar, and vegetable oil until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and sour cream until creamy.
  5. Add the dry ingredients to the wet ingredients in thirds, folding gently after each addition. Avoid overmixing.
  6. Fold in the shredded zucchini and chocolate chips evenly.
  7. Pour the batter into the prepared loaf pan and smooth the top. Tap the pan lightly on the counter to remove air bubbles.
  8. Bake for 50-60 minutes, checking doneness at 50 minutes by inserting a toothpick into the center; it should come out with a few moist crumbs but no wet batter.
  9. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to avoid dense bread. Drain zucchini well to prevent sogginess. Tent with foil if top browns too quickly. Use room temperature eggs and sour cream for best results. For dairy-free, substitute sour cream with coconut yogurt and use dairy-free chocolate chips.
