  • 2 cups (250g) All-Purpose Flour
  • 1 cup (226g) Unsalted Butter (divided)
  • 1 ½ cups (300g) Granulated Sugar
  • 3 large Eggs (room temperature)
  • 3 medium Honeycrisp Apples (peeled, chopped into ½-inch cubes)
  • 1 cup (240ml) Apple Cider (reduced to ½ cup)
  • 1 ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 ½ tsp Cinnamon
  • ½ tsp Nutmeg
  • ½ tsp Salt
  • 1 cup (120g) Confectioners’ Sugar (for glaze)
  • 2–3 tbsp Milk or Cream (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Reduce apple cider in a saucepan over medium-high heat until it reaches ½ cup (about 10 minutes). Let cool to room temperature.
  3. Brown ½ cup of butter in a saucepan over medium heat until nutty and amber-colored. Pour into a heatproof bowl to cool slightly.
  4. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. In another bowl, beat the remaining ½ cup softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then mix in the cooled brown butter and reduced apple cider.
  6. Gradually add dry ingredients to wet ingredients, mixing on low until just combined.
  7. Gently fold in the chopped Honeycrisp apples.
  8. Pour batter into prepared pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
  10. Whisk confectioners’ sugar with 2 tablespoons of milk or cream until drizzle-able consistency is reached.
  11. Drizzle glaze over the completely cool cake and let set for 10 minutes before slicing.

Notes

Ensure apples are fresh, not frozen, to prevent sogginess. Do not overmix the batter to maintain a tender crumb. The cake is best served at room temperature. Store covered at room temperature for up to 3 days.
