  • 2 large eggs

  • Optional: 1/2 to 1 cup chocolate chips, walnuts, or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper and grease lightly.
  2. Peel bananas and mash them in a large mixing bowl until mostly smooth with a few small chunks (about 1 to 1.5 cups).
  3. Add sugar, eggs, and melted butter or oil (if using) to the mashed bananas. Mix until well combined.
  4. Sprinkle flour, baking soda, and salt over the wet mixture.
  5. Gently fold the dry ingredients into the wet mixture just until the flour disappears. Do not overmix. Fold in optional add-ins if using.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes. Tent with foil at 40 minutes if browning too quickly. Test for doneness with a toothpick.
  8. Cool in the pan for 10 minutes, then lift out using parchment overhang and place on a wire rack to cool completely before slicing.
