  • 1 medium zucchini, grated and lightly squeezed to remove excess moisture
  • 2 cups (240g) all-purpose flour (can substitute with almond flour for gluten-free)
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup (100g) granulated sugar
  • ¼ cup packed (50g) brown sugar
  • ⅓ cup (80ml) vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 4 ounces (115g) cream cheese, softened
  • 3 tablespoons pure maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using a fine grater or food processor. Place the shredded zucchini in a clean towel and squeeze out excess moisture. Set aside.
  3. In a large mixing bowl, whisk together the flour, baking soda, cinnamon, and salt.
  4. In the same bowl, mash the bananas with a fork until smooth. Add granulated sugar, brown sugar, vegetable oil, vanilla extract, and eggs. Stir gently to combine without overmixing.
  5. Fold in the grated zucchini and then gradually fold in the dry ingredients until just combined, avoiding overmixing.
  6. In a small bowl, beat the softened cream cheese with maple syrup until smooth.
  7. Pour half the banana zucchini batter into the prepared loaf pan. Dollop half the cream cheese mixture over the batter and gently swirl with a knife or skewer. Repeat with remaining batter and cream cheese to create a marbled effect.
  8. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. If the top browns too quickly, loosely cover with foil halfway through baking.
  9. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely before slicing.

Squeeze out excess moisture from zucchini to avoid soggy bread. Use room temperature cream cheese for smooth swirl. Tent with foil if top browns too fast. Let bread cool completely before slicing to prevent crumbling. Can substitute gluten-free flour and dairy-free cream cheese for dietary needs.
