cinnamon apple crisp - featured image

A comforting dessert featuring tender, spiced apples topped with a crunchy, nutty oat crumble. This recipe uses old-fashioned oats for a chewy texture that avoids the greasiness of traditional flour-based crusts.

Ingredients

Scale
  • 6–7 large apples (mix of Granny Smith and Honeycrisp), peeled, cored, and sliced
  • 2 tablespoons lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, cold and cubed
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup coconut oil (optional, for dairy-free variation)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel, core, and slice apples into 1/4-inch thick slices.
  3. In a large bowl, toss apple slices with lemon juice, granulated sugar, 1/4 cup brown sugar, 2 tablespoons flour, 1 teaspoon cinnamon, nutmeg, and salt until evenly coated.
  4. Spread the apple mixture evenly into a 9×9 inch baking dish and press down slightly.
  5. In a medium bowl, whisk together 1 cup rolled oats, 1 cup all-purpose flour, 1/2 cup brown sugar, 1 teaspoon cinnamon, and 1/4 teaspoon salt.
  6. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or fingers to rub the butter in until the mixture resembles coarse crumbs with pea-sized butter chunks.
  7. Fold in chopped nuts if using.
  8. Sprinkle the oat crumble topping evenly over the apples without pressing it down.
  9. Bake for 45-50 minutes, or until the topping is golden brown and apples are tender.
  10. Let cool for 10-15 minutes before serving to allow juices to thicken.

Notes

Use cold butter for the topping to ensure a crisp texture. Do not use quick oats as they will turn to paste. Let the crisp rest for 10-15 minutes after baking to prevent soggy bottoms. For a gluten-free version, use a 1-to-1 gluten-free flour blend and certified gluten-free oats. For dairy-free, substitute butter with cold coconut oil.
