Perfect Flag Cake Recipe with Fresh Berry Toppings for Celebrations

A festive and easy-to-make cake featuring fluffy layers and fresh berries arranged in a patriotic flag pattern, perfect for celebrations and gatherings.

Ingredients

  • All-purpose flour – 2 ½ cups (320g), sifted
  • Baking powder – 2 ½ teaspoons (12g)
  • Salt – ½ teaspoon (3g)
  • Unsalted butter – 1 cup (227g), softened
  • Granulated sugar – 1 ¾ cups (350g)
  • Large eggs – 4, room temperature
  • Vanilla extract – 2 teaspoons (10ml)
  • Whole milk – 1 cup (240ml), room temperature
  • Cream cheese – 8 oz (225g), softened
  • Unsalted butter – ½ cup (113g), softened
  • Powdered sugar – 4 cups (480g), sifted
  • Vanilla extract – 1 teaspoon (5ml)
  • Heavy cream – 2 tablespoons (30ml)
  • Strawberries – 1 ½ cups (about 225g), hulled and sliced
  • Blueberries – 1 cup (150g), washed and dried
  • Raspberries – 1 cup (125g), gently rinsed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your cake pans or line them with parchment paper.
  2. Sift the flour, baking powder, and salt together. Set aside.
  3. Cream the butter and sugar using a mixer on medium speed until pale and fluffy, about 4-5 minutes.
  4. Add eggs one at a time, beating thoroughly after each addition.
  5. Mix in vanilla extract.
  6. Alternate adding dry ingredients and milk, starting with a third of the flour mixture, then half the milk, mixing on low speed until combined.
  7. Divide batter evenly between the two pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Cool cakes in pans for 10 minutes, then turn out onto cooling racks to cool completely.
  10. Prepare the frosting by beating cream cheese and ½ cup softened butter until smooth. Gradually add powdered sugar, then vanilla extract and heavy cream. Beat until fluffy and spreadable.
  11. Frost the first cake layer evenly on a serving plate.
  12. Top with the second cake layer, press gently, then frost the top and sides smoothly.
  13. Arrange berries on top in a flag pattern: blueberries in a corner square, then alternate stripes of strawberries and raspberries.

Notes

Use room temperature ingredients for best results. Pat berries dry before topping to prevent frosting from sliding. If frosting is too thick, add a splash of milk to loosen. Rotate pans halfway through baking for even cooking. Chill cake briefly before arranging berries to help them stay in place.
