  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup heavy whipping cream, cold
  • Extra heavy cream for brushing
  • 1.5 cups heavy whipping cream, very cold (for whipped cream)
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, toss sliced strawberries with 1/3 cup sugar, lemon juice, and 1/2 tsp vanilla. Let sit for 10 minutes to macerate.
  3. In a large bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
  4. Cut cold butter into the flour mixture using a pastry blender or forks until it resembles coarse meal with pea-sized butter chunks.
  5. Pour in 3/4 cup cold heavy cream and gently stir until the dough just comes together; do not overmix.
  6. Turn dough onto a floured surface, pat to 1-inch thickness, fold in half, and repeat 2-3 times. Pat to 1-inch thickness again.
  7. Cut into circles with a 2.5-inch biscuit cutter, pressing straight down without twisting.
  8. Place biscuits on the baking sheet, brush tops with extra cream, and bake for 15-18 minutes until golden brown.
  9. While biscuits bake, whip 1.5 cups cold heavy cream, powdered sugar, and 1 tsp vanilla until soft peaks form.
  10. Cool biscuits for 5 minutes, slice in half, and assemble with macerated strawberries and whipped cream.

Notes

Ensure all ingredients, especially butter and cream, are very cold to ensure fluffy biscuits. Do not overmix the dough or twist the biscuit cutter when cutting, as this prevents rising. For best results, serve immediately while biscuits are warm.
