Ingredients

Scale
  • 1 cup plain Greek yogurt (full-fat recommended)
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh chives, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 1 small garlic clove, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 810 ounces variety of cured meats (prosciutto, salami, capicola)
  • 6 ounces assorted firm cheeses (cheddar, gouda, manchego)
  • Sliced cucumbers
  • Baby carrots
  • Celery sticks
  • ½ cup green olives, pitted
  • Crackers and baguette slices (enough for about 10 servings)
  • Romaine lettuce leaves (to line the board)
  • Optional: Cherry tomatoes for garnish

Instructions

  1. In a medium bowl, combine Greek yogurt, chopped parsley, chives, and dill.
  2. Add minced garlic, lemon juice, and olive oil; stir gently to mix well.
  3. Season with salt and pepper to taste and refrigerate for at least 15 minutes.
  4. Lay romaine lettuce leaves side by side on the serving board to create the turf base.
  5. Fold or roll slices of cured meats and arrange them in neat rows on one side of the lettuce.
  6. Slice cheeses into bite-sized pieces and arrange in alternating rows next to the meats.
  7. Distribute sliced cucumbers, baby carrots, and celery sticks along the opposite sidelines.
  8. Place green olives in small bowls at the corners or ends of the board.
  9. Fan out baguette slices and crackers along the edges or near the dip bowl.
  10. Spoon the turf herb dip into a small bowl and place it prominently on the board.
  11. Garnish the dip with finely chopped parsley or chives for a fresh grassy look.

Notes

Keep meats cold and assemble just before serving to maintain freshness. Pat lettuce dry to avoid sogginess. Refrigerate dip to keep firm and stir if it separates. Use romaine lettuce for sturdiness. For gluten-free, substitute crackers with gluten-free options. For vegetarian, replace meats with marinated grilled vegetables and roasted chickpeas.
