A quick and easy summer treat combining smoky grilled peaches with creamy burrata, salty prosciutto, and a drizzle of spicy hot honey for a perfect balance of flavors.

Ingredients

Scale
  • 4 ripe but firm peaches, halved and pitted
  • 8 ounces fresh burrata cheese
  • 4 ounces thinly sliced prosciutto
  • 2 tablespoons hot honey
  • 2 tablespoons extra virgin olive oil
  • A handful of fresh basil leaves, torn (optional)
  • Freshly cracked black pepper, to taste
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Preheat your grill to 375°F to 400°F (190°C to 200°C), about 10 minutes.
  2. Rinse and dry the peaches, then cut them in half and remove the pits.
  3. Brush the cut sides of the peaches lightly with a mixture of olive oil and lemon juice to prevent sticking and add flavor.
  4. Place the peaches cut side down on the grill and grill for 3-4 minutes until char marks appear and they start to soften.
  5. Flip the peaches and grill the skin side for another 2 minutes until tender but still holding shape.
  6. Transfer grilled peaches to a serving platter, cut side up.
  7. Tear the burrata into chunks and scatter over the peaches.
  8. Drape thin slices of prosciutto around and on top of the peaches.
  9. Generously drizzle hot honey over the entire dish.
  10. Scatter torn fresh basil leaves and crack black pepper on top for a fresh finish.

Notes

Use ripe but firm peaches to avoid mushiness. Brush peaches with olive oil and lemon juice to prevent sticking. If you don’t have a grill, a hot cast-iron skillet or grill pan works well. For less heat, substitute hot honey with regular honey or mild chili-infused honey. Burrata can be substituted with mozzarella or ricotta if unavailable. Prepare all ingredients before grilling as cooking moves quickly.
