Perfect Slow-Roasted Cherry Tomato Pasta with Burrata

A comforting and flavorful pasta dish featuring slow-roasted cherry tomatoes and creamy burrata cheese, perfect for casual dinners and easy enough for busy nights.

  • 2 pounds (900g) cherry tomatoes, preferably firm and ripe
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, thinly sliced
  • Salt, to taste, plus a pinch for roasting
  • Freshly cracked black pepper, to finish
  • 1/4 teaspoon red pepper flakes (optional)
  • 12 ounces (340g) spaghetti or linguine
  • 8 ounces (225g) burrata cheese, fresh and creamy
  • A handful fresh basil leaves, torn for garnish
  • Lemon zest from one lemon (optional)

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Rinse 2 pounds (900g) of cherry tomatoes and pat them dry. Slice larger tomatoes in half, leaving smaller ones whole.
  3. Line a baking sheet with parchment paper or a silicone baking mat. Scatter the tomatoes evenly, drizzle with 3 tablespoons olive oil, sprinkle 4 thinly sliced garlic cloves, a pinch of salt, and red pepper flakes if using. Toss gently to coat.
  4. Roast the tomatoes slowly in the oven for 1 hour and 20 minutes until soft, slightly shriveled, and caramelized but not burnt.
  5. While the tomatoes roast, bring a large pot of salted water to a boil. Cook 12 ounces (340g) of spaghetti or linguine until just al dente (8-10 minutes). Reserve about 1 cup of pasta water, then drain the pasta.
  6. Transfer the drained pasta to a large mixing bowl. Add the slow-roasted cherry tomatoes and their juices. Pour in 1/4 cup (60ml) of reserved pasta water and 1 tablespoon olive oil. Toss gently with tongs or a pasta fork to combine, adding more pasta water if needed to reach desired sauce consistency.
  7. Taste and adjust salt and pepper. Add torn fresh basil leaves and lemon zest if using.
  8. Divide the pasta among plates or bowls and top each serving with generous spoonfuls of creamy burrata. Let the cheese melt slightly before mixing it into the pasta.

Notes

Slow-roasting at low temperature (275°F) is key to coaxing out the tomatoes’ natural sweetness without drying them out. Reserve pasta water to help the sauce cling to the pasta. Add burrata just before serving to keep its creamy texture intact. Soak the roasting pan immediately after use for easier cleanup.
