Refreshing Aperol Spritz Popsicles

A vibrant, tangy, and bubbly frozen treat combining Aperol, prosecco, and fresh blood orange juice, perfect for cooling down on hot summer days.

  • 1 cup (240 ml) Aperol
  • 2 cups (480 ml) prosecco (dry or extra dry)
  • 1 cup (240 ml) fresh blood orange juice
  • ½ cup (120 ml) simple syrup (equal parts sugar and water)
  • Fresh blood orange slices for layering
  • Optional: ½ cup (120 ml) club soda

Instructions

  1. Make the simple syrup: In a small saucepan, combine ½ cup (100g) granulated sugar and ½ cup (120 ml) water. Heat over medium until sugar dissolves completely, stirring occasionally (about 3-5 minutes). Remove from heat and cool to room temperature.
  2. Juice the blood oranges: Using a citrus juicer, extract 1 cup (240 ml) of fresh blood orange juice. Strain to remove seeds and pulp.
  3. Mix the liquid ingredients: In a large mixing bowl, combine 1 cup (240 ml) Aperol, 2 cups (480 ml) prosecco, blood orange juice, and cooled simple syrup. Stir gently to blend, preserving prosecco bubbles.
  4. Optional club soda addition: Fold in ½ cup (120 ml) club soda if using.
  5. Prepare the popsicle molds: Place a thin slice or two of blood orange into each mold.
  6. Pour the mixture: Fill each mold with the Aperol-prosecco mixture, leaving a small gap at the top.
  7. Insert sticks and freeze: Place popsicle sticks into molds and freeze for at least 6 hours or overnight until firm.
  8. Unmold carefully: Run warm water over the outside of the molds for a few seconds to release popsicles.

Notes

Use fresh blood oranges for best flavor and color. Stir gently to preserve prosecco bubbles. Freeze for at least 6 hours or overnight. Run warm water on molds to unmold easily. Adjust simple syrup sweetness to taste. Optional club soda can be added for lighter fizz.
