Refreshing Frozen Peach Bellini with Mint for Brunch

A light, fruity, and refreshing frozen peach bellini blended with fresh mint and sparkling wine, perfect for an easy and elegant brunch.

  • 2 cups (300g) frozen peaches, sliced
  • 10 fresh mint leaves, washed and roughly chopped
  • 1 cup (240ml) chilled sparkling wine (Prosecco or dry Brut recommended)
  • 1 tablespoon honey or agave syrup (optional)
  • 1 teaspoon fresh lemon juice
  • Ice cubes (none needed if peaches are properly frozen; optional if not)

Instructions

  1. Make sure your peaches are fully frozen. If using fresh, slice and freeze them for at least 6 hours or overnight.
  2. In the blender, add the chopped mint leaves and lemon juice. Pulse gently for about 10 seconds until the mint releases its aroma but doesn’t turn into a puree.
  3. Add the frozen peaches and drizzle the honey or agave syrup if using. Blend on medium-high speed for about 30-45 seconds until smooth but still thick. Stop to scrape down the sides if needed.
  4. Pour the chilled sparkling wine into the blender. Pulse just a few times to combine; don’t overblend or you’ll lose the fizz. The mixture should be slushy with tiny bubbles.
  5. Pour into chilled glasses. Garnish with a small mint sprig or a thin peach slice if desired. Serve immediately.

Notes

Freeze peaches evenly sliced for smooth blending. Pulse mint gently to avoid bitterness. Do not overblend sparkling wine to preserve bubbles. Chill glasses and blender jar if possible to keep drink cold longer. Adjust sweetness and mint to taste. For non-alcoholic version, substitute sparkling wine with sparkling water or white grape juice.
