A perfect summer drink blending sweet tea, fresh peaches, bourbon, and mint, garnished with candied peaches for a refreshing and boozy treat.

Ingredients

Scale
  • 4 black tea bags
  • 4 cups (950 ml) boiling water
  • 1/2 cup (100 g) granulated sugar (adjust to taste)
  • 2 ripe peaches, sliced (fresh or frozen)
  • 1/4 cup (60 ml) bourbon
  • 1/4 cup (60 ml) freshly squeezed lemon juice (about 2 lemons)
  • 1012 fresh mint leaves, plus extra for garnish
  • For the Candied Peach Garnish:
  • 1 peach, sliced thin
  • 1/4 cup (50 g) granulated sugar
  • 1 tablespoon water

Instructions

  1. Place the black tea bags in a large heatproof pitcher. Pour 4 cups (950 ml) of boiling water over the bags and let steep for 5-7 minutes. Remove the tea bags gently.
  2. While the tea is still warm, stir in 1/2 cup (100 g) granulated sugar until fully dissolved. Let the tea cool to room temperature, then chill in the fridge for at least 30 minutes.
  3. In a medium saucepan, combine 1/4 cup (50 g) sugar and 1 tablespoon water over medium heat. Stir until sugar dissolves, then add thin peach slices. Cook gently, turning occasionally, until peaches become translucent and syrupy, about 5-7 minutes. Watch carefully to avoid burning.
  4. Once tea is chilled, add the sliced peaches (fresh, not candied), bourbon (1/4 cup or 60 ml), freshly squeezed lemon juice (1/4 cup or 60 ml), and mint leaves. Gently bruise the mint with a muddler or wooden spoon to release aroma. Stir well to combine.
  5. Fill glasses with ice and pour the peach bourbon sweet tea over. Garnish each glass with a sprig of fresh mint and a slice or two of candied peaches. Serve immediately.

Notes

Do not over-steep the tea to avoid bitterness. Dissolve sugar in hot tea for best texture. Watch candied peaches closely to prevent burning. Adjust bourbon and sugar to taste. For non-alcoholic version, omit bourbon and add peach nectar or extra lemon juice.
