A quick and easy watermelon granita with a spicy twist of Tajín and fresh lime juice, perfect for cooling off on hot summer days.

Ingredients

Scale
  • 6 cups (900g) seedless watermelon, cubed and deseeded if needed
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons fresh lime juice (about 1 large lime)
  • 1 to 1.5 teaspoons Tajín seasoning, plus extra for sprinkling
  • 1/4 cup (60ml) water

Instructions

  1. Cut about 6 cups (900g) of seedless watermelon into cubes and remove any seeds if necessary.
  2. In a small saucepan, combine 1/4 cup (50g) sugar with 1/4 cup (60ml) water. Heat gently, stirring until sugar dissolves completely. Let it cool to room temperature (about 10-15 minutes).
  3. In a blender, combine the watermelon cubes, cooled simple syrup, 2 tablespoons of fresh lime juice, and 1 to 1.5 teaspoons of Tajín seasoning. Blend until smooth, about 1-2 minutes.
  4. Pour the blended mixture into a shallow 9×13 inch (23×33 cm) metal or glass baking dish. Place it in the freezer uncovered.
  5. After about 45 minutes, check the edges and use a fork to scrape and fluff the icy parts, breaking up any frozen chunks. Return to the freezer.
  6. Scrape with a fork every 30 minutes for the next 2 to 3 hours until the entire mixture is frozen with fluffy, flaky crystals.
  7. Scoop the granita into chilled glasses or bowls, and sprinkle extra Tajín on top just before serving. Add a lime wedge for garnish if desired.

Notes

Do not skip the scraping steps to achieve light, flaky granita texture. Use ripe watermelon for best sweetness. Adjust Tajín seasoning to taste. Store leftovers in an airtight container in the freezer for up to 3 days. Let sit at room temperature for 5-10 minutes before fluffing with a fork to serve again.
