Refreshing Watermelon Slushie

A quick and easy frozen summer treat made with fresh watermelon, lime juice, a touch of sweetener, and ice for a perfectly balanced, refreshing flavor.

  • 4 cups watermelon, cubed and chilled (seedless preferred)
  • 2 tablespoons fresh lime juice (about 1 large lime)
  • 1 to 2 tablespoons honey or agave syrup (adjust to taste; maple syrup works too)
  • 2 cups ice cubes
  • A handful of mint leaves (optional, for garnish or blending)
  • A tiny pinch of salt (optional)

Instructions

  1. Cut about 4 cups of watermelon into cubes, removing any seeds. Chill the cubes in the fridge at least 30 minutes beforehand if possible.
  2. Roll the lime on the counter to loosen the juice, then squeeze out about 2 tablespoons. Strain the juice through a fine sieve to keep it smooth.
  3. Add the chilled watermelon cubes, fresh lime juice, 1 to 2 tablespoons honey, a tiny pinch of salt, and 2 cups of ice cubes to your blender. Pulse first to break the ice, then blend on high for about 30-45 seconds until smooth and slush-like. Stop and scrape down the sides if needed.
  4. Taste and adjust sweetness by adding more honey if needed. If too thick, add a tablespoon of cold water or more lime juice and blend briefly.
  5. Pour into chilled glasses, garnish with fresh mint leaves if desired, and serve immediately.

Notes

Use ripe watermelon for best sweetness. Frozen watermelon chunks thawed slightly can be used if fresh is unavailable. Pulse ice first if blender is less powerful to avoid chunky texture. Adjust sweetness after blending. Serve immediately for best texture. Store leftovers in airtight container in freezer up to 24 hours and re-blend before serving.
