A quick and easy crowd-pleasing snack featuring cocktail smokies wrapped in thin-cut bacon and coated with a sticky, caramelized sweet brown sugar glaze. Perfect for game days, potlucks, or casual gatherings.

Ingredients

Scale
  • 24 cocktail-sized smoked sausages (about 1 pound / 450g)
  • 12 slices thin-cut bacon, halved
  • ½ cup (100g) packed light brown sugar
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium mixing bowl, combine ½ cup light brown sugar, 1 tablespoon Dijon mustard, ½ teaspoon garlic powder, ¼ teaspoon black pepper, and ½ teaspoon smoked paprika (if using). Stir until smooth and sticky.
  3. Wrap each cocktail smokie tightly with half a slice of bacon. Secure with a toothpick if needed.
  4. Dip each bacon-wrapped smokie into the brown sugar glaze, ensuring it’s fully coated. Place on a wire rack set over a baking sheet or directly on a parchment-lined baking sheet.
  5. Bake for 20-25 minutes, checking around 15 minutes for bacon crispiness. Tent with foil if glaze starts to burn.
  6. Remove from oven and let cool for 5 minutes before serving.

Notes

Use thin-cut bacon for best crispiness. Chill wrapped smokies for 15 minutes before baking to help bacon hold shape. Rotate baking sheet halfway through cooking for even browning. If using thick-cut bacon, increase baking time slightly. For gluten-free, verify smokies and bacon labels. Can be grilled over medium heat for 8-10 minutes as an alternative cooking method.
