A rich and nutty turkey sandwich featuring brown butter-coated pretzel rolls, Swiss cheese, caramelized onions, and baby arugula. Perfect for a quick, flavorful lunch or casual dinner.

Ingredients

Scale
  • 4 soft pretzel rolls
  • 4 tablespoons unsalted butter
  • 8 ounces roasted turkey breast slices
  • 4 slices Swiss cheese
  • 2 tablespoons Dijon mustard
  • 2 tablespoons mayonnaise (optional)
  • 1 cup caramelized onions
  • 1 cup baby arugula
  • Pinch of sea salt
  • Freshly ground black pepper to taste

Instructions

  1. Brown the Butter: In a medium skillet over medium heat, melt 4 tablespoons of unsalted butter. Keep a close eye as it foams, then starts turning golden brown with a nutty aroma (about 4-5 minutes). Once browned, immediately remove from heat to prevent burning. Use a silicone brush or spoon to generously coat the cut sides of the pretzel rolls with this brown butter. Sprinkle a pinch of sea salt on each.
  2. Toast the Pretzel Rolls: Place the buttered rolls, cut side down, in the skillet over medium heat. Toast until golden and slightly crisp, about 2-3 minutes. Remove and set aside.
  3. Caramelize the Onions: If not pre-made, slice one large onion thinly and cook slowly in a pan with a teaspoon of oil over low heat for about 25-30 minutes, stirring often, until soft and golden brown. Season lightly with salt and pepper.
  4. Assemble the Sandwich: Spread Dijon mustard on the bottom halves of the rolls, and mayonnaise on the top halves if using. Layer with turkey slices, a slice of Swiss cheese, a generous spoonful of caramelized onions, and a handful of baby arugula. Close the sandwich with the top half of the roll.
  5. Warm the Sandwich: Place the assembled sandwich back in the skillet over low heat, cover lightly with a lid or foil to help the cheese melt, and warm for 3-4 minutes. Watch carefully to avoid burning the roll.
  6. Serve: Slice the sandwich in half and enjoy warm.

Notes

Watch the brown butter closely to avoid burning; medium heat is key when toasting pretzel rolls to get a crisp crust without drying them out. Caramelized onions take time but add great flavor. To reheat leftovers, wrap in foil and warm in a 350°F oven for 10 minutes to preserve texture.
