Instructions

  1. Make the Secret Sauce: In a small bowl, combine mayonnaise, ketchup, Dijon mustard, diced pickles, apple cider vinegar, smoked paprika, and cayenne pepper. Stir until smooth. Set aside about 1/4 cup for mixing into the beef, and reserve extra for serving if desired.
  2. Prepare the Beef Mixture: In a medium bowl, place the ground beef. Add 1/4 cup of the secret sauce, Worcestershire sauce, garlic powder, salt, and pepper. Gently mix together with your hands or a spoon just until combined. Be careful not to overwork the meat.
  3. Form the Patties: Divide the mixture into 4 equal portions (about 4 ounces or 115 grams each). Shape each portion into a round patty roughly 3/4-inch (2 cm) thick. Make a slight indentation in the center with your thumb.
  4. Preheat the Grill: Heat your grill or grill pan to medium-high heat (about 375°F/190°C). Oil the grates lightly to prevent sticking.
  5. Grill the Patties: Place the patties on the grill and cook for about 4-5 minutes per side for medium doneness. If adding cheese, place a slice on each patty during the last minute of cooking and close the grill lid to melt. Use a meat thermometer to check for 160°F (71°C).
  6. Toast the Buns: While the patties cook, slice and toast the burger buns on the grill for 1-2 minutes until golden brown and slightly crispy.
  7. Assemble the Burgers: Spread extra secret sauce on the bottom buns. Add a lettuce leaf, the hot beef patty, tomato slice, and onion rings. Top with the other bun half. Serve immediately.

Notes

If the sauce seems too runny when mixing into the beef, add a teaspoon of breadcrumbs to help bind it. Do not press down on the patties while grilling to keep them juicy. Let patties rest for a few minutes after cooking. The secret sauce can be made ahead and tastes better after sitting in the fridge. For gluten-free options, use gluten-free buns or lettuce wraps and substitute Worcestershire sauce with a gluten-free brand.
