Slow Cooker White Bean and Smoked Sausage Soup

  • 1 pound (about 2 cups) dried navy beans or great northern beans, soaked overnight (or 4 cups canned, drained)
  • 1 pound smoked kielbasa or Andouille sausage, sliced into ½-inch rounds
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 6 cups chicken broth (low sodium recommended)
  • 2 whole bay leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • A handful fresh parsley, chopped (for garnish)

Instructions

  1. If using dried beans, rinse 1 pound thoroughly and soak overnight in a large bowl with enough water to cover by 2 inches. Drain and rinse before cooking. If using canned beans, drain and rinse well.
  2. Dice the onion, carrots, and celery into small, uniform pieces. Slice the smoked sausage into ½-inch rounds.
  3. Add soaked and drained beans (or canned beans), diced onion, carrots, celery, sliced sausage, minced garlic, chicken broth, bay leaves, smoked paprika, and dried thyme into the slow cooker. Stir gently to combine.
  4. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours. The soup is done when beans are tender but not mushy and sausage is flavorful.
  5. Remove bay leaves. Season with salt and black pepper starting with 1 teaspoon salt and ½ teaspoon black pepper, adjusting to taste.
  6. Stir in fresh chopped parsley just before serving.

Notes

If short on time, use canned beans added in the last 1-2 hours to avoid mushiness. For extra flavor, brown sausage before adding to slow cooker. Adjust salt at the end to avoid over-seasoning. Fresh herbs added at the end brighten the soup. Slow cooker temperatures vary; check soup an hour before end time to prevent overcooking. Soup thickens as it cools; add broth or water if needed when reheating.
