  • 3 tablespoons unsalted butter, softened
  • 1 tablespoon apple juice or cider
  • ½ teaspoon vanilla extract
  • A pinch of cinnamon (optional)
  • Green and red food coloring (optional)
  • Mini chocolate chips or edible markers (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon.
  3. Using a mixer, beat softened butter with granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, then stir in vanilla extract and apple juice or cider.
  5. Gradually add dry ingredients to the wet mixture, mixing on low speed just until combined.
  6. Lightly flour your surface and roll the dough out to about ¼ inch (6 mm) thickness. Use an apple-shaped cookie cutter to cut out cookies and transfer them to baking sheets about 1 inch apart. Chill dough for 10 minutes if too soft.
  7. Bake for 10-12 minutes until edges start to turn golden but centers remain soft. Let cool on baking sheet for 5 minutes, then transfer to wire racks to cool completely.
  8. While cookies cool, beat together powdered sugar, softened butter, apple juice, vanilla extract, and a pinch of cinnamon until smooth and spreadable. Add more apple juice if needed.
  9. Spread a thin layer of frosting on each cooled cookie. Use green and red food coloring on small amounts of frosting for leaves and blush. Add mini chocolate chips or edible markers for stems.
  10. Let frosting set for about 30 minutes before serving.

Notes

Do not overbake cookies; remove when edges just start to turn golden to keep them soft. Chill dough if too soft for easier cutting. Use room temperature eggs and butter for best texture. Sift powdered sugar for smooth frosting. Frosting sets best after 30 minutes at room temperature or 15-20 minutes in fridge. Store cookies in airtight container with a slice of apple to maintain softness.
