These soft no-chill funfetti pudding cookies are quick to make, chewy, and bursting with colorful rainbow sprinkles. The vanilla pudding mix adds moisture and tenderness without the need to chill the dough.

  • 1 (3.4 oz / 96 g) box vanilla instant pudding mix
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (227 g) unsalted butter, softened to room temperature
  • ¾ cup (150 g) granulated sugar
  • ¾ cup (165 g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (about 150 g) rainbow sprinkles (sturdy jimmies or non-melting types recommended)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, whisk together the all-purpose flour, vanilla instant pudding mix, baking soda, and salt. Set aside.
  3. In a separate bowl, beat the softened unsalted butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then stir in the pure vanilla extract until the batter is smooth and glossy.
  5. Gradually add the dry mixture to the wet ingredients, mixing on low speed or folding gently until just combined. Avoid overmixing.
  6. Gently fold in the rainbow sprinkles, being careful not to crush them.
  7. Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes until edges are set and slightly golden but centers remain soft.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
