  • ¾ cup (150g) light brown sugar, packed
  • 2 tablespoons granulated sugar
  • ¼ cup (57g) unsalted butter, melted and slightly cooled
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons pumpkin pie spice
  • ½ cup (85g) dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 6-cup muffin tin with paper liners or grease with butter.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt. Set aside.
  3. In a separate large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth. Whisk in egg, pumpkin puree, and vanilla extract until combined.
  4. Gently fold dry ingredients into wet ingredients using a rubber spatula until no dry streaks remain. Do not overmix.
  5. Fold in chocolate chips, reserving a small handful for topping.
  6. Divide batter evenly among 6 muffin cups (about ¾ full) and sprinkle reserved chocolate chips on top.
  7. Bake for 18-22 minutes until a toothpick inserted into the center comes out clean or with moist crumbs.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

Ensure pumpkin puree is not watery; strain if necessary. Use room temperature eggs for better incorporation. Do not overmix the batter to ensure soft muffins. Store in an airtight container at room temperature for up to 2 days, or freeze for up to 3 months.
