  • 2–3 tablespoons granulated white sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon cayenne pepper
  • 1 pinch salt

Instructions

  1. In a small saucepan, whisk together cocoa powder, sugar, cinnamon, chili powder, cayenne, and salt to ensure even distribution.
  2. Pour in about 1/4 cup of cold milk and whisk vigorously until a smooth, thick paste forms.
  3. Add the remaining milk and stir to combine.
  4. Place the saucepan over medium-low heat and heat gently, whisking constantly to prevent scalding and create a frothy texture.
  5. Once the milk is steaming hot (around 160°F/70°C) but not boiling, remove from heat.
  6. Stir in the vanilla extract.
  7. Strain if desired to remove spice particles, pour into mugs, and serve immediately.

Notes

Start with mild chili powder and adjust heat to taste. Toasting spices lightly before adding can deepen flavor. For a dairy-free option, use oat milk or full-fat coconut milk. Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stove.
