  • 1 cup peach schnapps
  • 1 cup orange juice
  • 1 cup pomegranate seeds, divided
  • 1 packet (0.25 oz or 7 grams) unflavored gelatin powder
  • 1 cup water, divided
  • 1/2 cup white chocolate chips
  • Black food coloring gel
  • Ice for serving

Instructions

  1. Melt white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Let cool slightly.
  2. Roll the chocolate into tiny balls (about 1/2 inch diameter). Use a toothpick dipped in black food coloring gel to dot the center of each ball to create pupils.
  3. Place eyeballs on a parchment-lined baking sheet and let them harden completely at room temperature.
  4. Sprinkle unflavored gelatin powder over 1/4 cup of cold water in a small bowl. Stir gently and let sit for 5 minutes to bloom.
  5. In a saucepan, combine red wine, peach schnapps, orange juice, and remaining 3/4 cup water. Heat over medium heat until hot (around 160°F/70°C) but not boiling.
  6. Remove from heat and add the bloomed gelatin mixture. Whisk vigorously for 1-2 minutes until completely dissolved and clear.
  7. Pour the mixture into a large pitcher. Add 1/2 cup of pomegranate seeds and stir gently.
  8. Refrigerate for 4-6 hours until the mixture sets to a jelly-like consistency (firm but wobbly).
  9. Gently drop the hardened chocolate eyeballs into the set sangria. They should float near the surface.
  10. Serve in clear glasses over ice. Garnish with mint or extra pomegranate seeds if desired.

Notes

Do not boil the sangria mixture as high heat breaks down gelatin setting power. Ensure eyeballs are completely hardened before adding to prevent sinking or melting. For a non-alcoholic version, substitute wine with grape juice and schnapps with peach nectar. For vegan adaptation, use agar-agar instead of gelatin.
