These tender, cheesy muffins sneak in broccoli for a healthy snack that’s perfect for lunchboxes or anytime cravings. They have a soft crumb and a subtle veggie flavor that even picky eaters will love.

  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup (100 g) broccoli florets, finely chopped (fresh or steamed)
  • 1 cup (110 g) sharp cheddar cheese, shredded
  • 2 large eggs, room temperature
  • ¾ cup (180 ml) milk (whole milk preferred, almond or oat milk optional)
  • ½ cup (120 g) plain Greek yogurt
  • ¼ cup (60 ml) olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your muffin tin or line it with paper liners.
  2. If using fresh broccoli, finely chop florets into tiny pieces. For softer texture, steam broccoli for 2-3 minutes until just tender, then drain and cool.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.
  4. In a separate bowl, whisk eggs, milk, Greek yogurt, and olive oil until smooth.
  5. Pour wet ingredients into dry ingredients and gently fold together with a spatula until just combined; a few lumps are okay.
  6. Fold in chopped broccoli and shredded cheddar cheese gently to distribute evenly.
  7. Spoon batter evenly into muffin cups, filling each about two-thirds full (makes 12 muffins).
  8. Bake for 18-22 minutes, checking doneness with a toothpick inserted in the center; it should come out clean or with a few crumbs.
  9. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to keep muffins tender. Finely chop broccoli to avoid crunchy or mushy texture. Use sharp cheddar for best flavor. Room temperature eggs and dairy help batter rise evenly. If tops brown too quickly, tent with foil halfway through baking. Cool muffins completely to prevent sogginess.
