  • 1/2 cup beef broth or stock
  • 1 tablespoon Worcestershire sauce
  • 2 large sweet potatoes (about 1 pound), peeled and cubed
  • 3 tablespoons unsalted butter, softened
  • 1/4 cup heavy cream or full-fat coconut milk
  • 1 clove garlic, crushed (optional)
  • Salt and pepper, to taste
  • Fresh chopped parsley or chives, for garnish

Instructions

  1. Peel and cut the sweet potatoes into evenly sized 1-inch cubes. Place in a medium saucepan, cover with cold water, add a pinch of salt, and bring to a boil. Reduce to a simmer and cook until tender, about 15-20 minutes. Drain well.
  2. While the potatoes cook, pat the sirloin tips dry with paper towels. Season generously with salt, pepper, and smoked paprika on all sides.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering. Add beef tips in a single layer without crowding. Sear for 2-3 minutes per side until browned.
  4. Push beef to one side of the pan. Add chopped onion and minced garlic to the empty side and sauté until fragrant and translucent, about 3-4 minutes. Stir gently to combine.
  5. Pour in beef broth and Worcestershire sauce, scraping the pan bottom to loosen browned bits. Reduce heat to medium-low, cover, and simmer for 10-12 minutes until beef is tender.
  6. Return to the drained sweet potatoes. While hot, add butter, cream, garlic (if using), salt, and pepper. Mash with a potato masher or whip gently until smooth and creamy. Adjust seasoning to taste.
  7. Plate the sweet potato mash, top with the tender sirloin tips and pan juices, and garnish with fresh parsley or chives.
  8. Serve immediately while hot.
