Tender Never-Dry Crockpot Honey Garlic Chicken Breast Recipe with Roasted Carrots

A simple and easy slow cooker recipe for tender, juicy honey garlic chicken breasts paired with perfectly roasted carrots, ideal for busy weeknights.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700 grams)
  • 1/4 cup (85 grams) honey
  • 4 cloves garlic, minced
  • 1/4 cup (60 ml) soy sauce (low sodium preferred)
  • 2 tablespoons (30 ml) apple cider vinegar
  • 1 tablespoon (15 ml) olive oil
  • 1 pound (450 grams) carrots, peeled and cut into sticks or rounds
  • 1 teaspoon dried thyme (optional)
  • Salt and black pepper to taste

Instructions

  1. In a mixing bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, and olive oil until smooth and glossy (about 5 minutes).
  2. Lightly season the chicken breasts with salt and pepper.
  3. Place the chicken breasts flat in the crockpot without overlapping much. Pour the honey garlic sauce evenly over the chicken. Do not stir.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
  5. About 30 minutes before the chicken is done, preheat the oven to 425°F (220°C). Toss the carrots with olive oil, salt, pepper, and dried thyme (if using). Spread evenly on a rimmed baking sheet.
  6. Roast the carrots for 25-30 minutes, turning halfway through, until tender and caramelized at the edges.
  7. When the chicken is done, remove breasts and let rest for 5 minutes. If the sauce is too thin, simmer it in a small saucepan over medium heat for 5 minutes until thickened.
  8. Serve the chicken breasts with a generous spoonful of honey garlic sauce and a side of roasted carrots. Garnish with fresh parsley if desired.

Cook chicken low and slow to keep it tender and juicy. Avoid opening the crockpot lid frequently to maintain heat. Use fresh garlic for best flavor. Rest chicken after cooking to seal in juices. Roast carrots separately for caramelization. Double the sauce if you prefer extra. Add a splash of water or broth if sauce reduces too quickly.
