Instructions

  1. In a medium bowl, whisk together chopped chipotle peppers in adobo, fresh lime juice, minced garlic, honey, olive oil, chicken broth, cumin, paprika, salt, and black pepper until well combined.
  2. Arrange the chicken breasts evenly in the crockpot. Pour the chipotle lime sauce mixture over the chicken, coating each breast well. Do not stir.
  3. Cover and cook on LOW for 4 to 5 hours, or until the chicken reaches an internal temperature of 165°F and is tender enough to shred easily.
  4. Using two forks or shredding claws, shred the chicken breasts directly in the crockpot, mixing them with the sauce to keep the meat moist and flavorful.
  5. Taste and adjust seasoning with additional salt, lime juice, or honey if needed. If the sauce is too thin, remove the lid and cook on high for 15-20 minutes to reduce.
