  • 2 cups cooked, shredded chicken (about 2 large chicken breasts or 1 rotisserie chicken)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup Buffalo hot sauce (like Frank’s RedHot)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup crumbled blue cheese (optional but highly recommended)
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional: 1 tablespoon butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Shred your chicken into small, bite-sized pieces.
  3. Soften the cream cheese by letting it sit at room temperature for 30 minutes or microwaving for 15-20 seconds.
  4. In a medium mixing bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, and a pinch of black pepper. Use a hand mixer on low speed until smooth and fluffy.
  5. Pour in the Buffalo sauce and mix until fully incorporated. Taste and adjust heat if desired.
  6. Fold in the shredded chicken, 1/2 cup of the cheddar, and 1/2 cup of the Monterey Jack with a rubber spatula until evenly coated.
  7. Transfer the mixture to a 9×9-inch baking dish or small oven-safe skillet and spread into an even layer.
  8. Top with the remaining cheddar and Monterey Jack cheese. If using blue cheese, scatter it on top.
  9. Bake for 20-25 minutes until bubbly around the edges and the cheese is melted and golden. For a browner top, broil for 1-2 minutes.
  10. Let the dip rest for 5 minutes before serving. Garnish with chopped green onions and extra hot sauce if desired.

Notes

For a quicker version, use the microwave method: after step 6, transfer to a microwave-safe dish, cover loosely, and microwave on high for 2-3 minutes. Stir, then microwave another 1-2 minutes until hot. Top with cheese and microwave 30 seconds to melt. The dip can be assembled ahead and refrigerated overnight; add 5-10 minutes to baking time if baking from cold.
