  • 3 medium ripe bananas, mashed
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (1 stick, 115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 8 ounces (225g) cream cheese, softened
  • ½ cup (60g) powdered sugar
  • ¾ cup (85g) chopped walnuts, toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Toast the walnuts on a baking sheet in the oven for 5-7 minutes until fragrant. Let cool completely.
  3. In a medium bowl, beat together the softened cream cheese and powdered sugar until smooth. Set aside.
  4. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  5. In another bowl, beat the softened butter and granulated sugar until light and fluffy, about 3 minutes.
  6. Beat in the eggs one at a time, then add the vanilla extract, mixing well after each addition.
  7. Stir in the mashed bananas until combined.
  8. Gradually fold the flour mixture into the banana mixture just until no streaks remain; avoid overmixing.
  9. Pour half of the banana batter into the prepared pan. Dollop half of the cream cheese mixture evenly over the batter and swirl gently with a knife to create a marbled effect.
  10. Sprinkle half the toasted walnuts over the cream cheese layer.
  11. Pour the remaining batter over the walnut layer, dollop the remaining cream cheese mixture, swirl again, and top with the rest of the walnuts.
  12. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs. Tent with foil after 40 minutes if the top browns too quickly.
  13. Cool the banana bread in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for natural sweetness and moistness. Toast walnuts lightly to avoid bitterness. Chill cream cheese mixture slightly if it sinks too much. Tent loaf with foil if top browns too quickly. Let bread cool completely before slicing to set the cream cheese layer.
