Wholesome Pumpkin Protein Muffins

These moist and tender pumpkin protein muffins combine almond flour and chocolate chips for a wholesome, nourishing treat perfect for breakfast or a post-workout snack.

  • 2 cups almond flour (about 192g), finely ground
  • 1 cup pumpkin puree (240ml), canned or fresh
  • ½ cup protein powder (about 50g), vanilla or unflavored whey or plant-based
  • 3 large eggs, room temperature
  • ¼ cup maple syrup (60ml)
  • ¼ cup unsweetened almond milk (60ml)
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • ½ cup semi-sweet or dark chocolate chips (90g)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it lightly with coconut oil to prevent sticking.
  2. In a large bowl, whisk together almond flour, protein powder, baking soda, cinnamon, nutmeg, and salt until evenly combined.
  3. In another bowl, beat eggs with pumpkin puree, maple syrup, almond milk, and vanilla extract until smooth and slightly frothy.
  4. Pour the wet mixture into the dry ingredients bowl. Fold gently with a spatula until just combined; do not overmix.
  5. Fold in chocolate chips evenly throughout the batter, reserving a few to sprinkle on top if desired.
  6. Divide batter evenly into the 12 muffin cups, filling each about ¾ full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the muffins cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to avoid dense muffins. Use room temperature eggs and wet ingredients for smooth batter. Fresh baking soda is important for proper rise. If pumpkin puree is watery, strain before use. Tent muffins with foil if browning too fast. Batter can be chilled briefly for better shape. Muffins can be frozen individually wrapped for up to 2 months.
