  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the grill: Clean grates thoroughly, oil them, and preheat to medium-high heat (400°F to 450°F).
  2. Make the lemon garlic butter: In a small bowl, combine softened butter, minced garlic, lemon zest, 2 tablespoons lemon juice, and chopped parsley. Mix well and set aside.
  3. Prepare the salmon: Pat fillets dry with paper towels. Brush lightly with olive oil on both sides. Season generously with salt and pepper.
  4. Grill the salmon skin-side down: Place fillets on the hot grill at a 45-degree angle. Close lid and cook undisturbed for 5-6 minutes until skin is crispy and releases easily.
  5. Flip and baste: Carefully flip fillets. Immediately brush or spoon lemon garlic butter over the top. Close lid and cook for 3-4 minutes until internal temperature reaches 125°F to 130°F for medium.
  6. Rest and serve: Remove from grill, spoon remaining butter sauce over top, and let rest for 2 minutes. Garnish with fresh parsley and lemon wedges. Serve immediately.

Notes

Do not move the fish too early; let it sear undisturbed for 5-6 minutes. Use an instant-read thermometer for perfect doneness. For thinner fillets, reduce cooking time by 1-2 minutes per side. For thicker fillets, add an extra minute. If using a gas grill, keep the lid closed as much as possible.
