  • ½ cup vegetable shortening, cold
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 6–8 tablespoons ice water
  • 15 oz pure pumpkin puree
  • 12 oz evaporated milk
  • ½ cup heavy cream
  • 2 large eggs + 1 egg yolk
  • ¾ cup granulated sugar
  • ½ cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a food processor, pulse flour, salt, and sugar to mix.
  3. Add cold butter and shortening; pulse in short bursts until mixture resembles coarse meal with pea-sized butter pieces.
  4. Add ice water one tablespoon at a time, pulsing until dough clumps together.
  5. Turn dough out, press together, flatten into a disk, wrap in plastic, and refrigerate for at least 1 hour.
  6. Roll dough into a 12-inch circle on a floured surface and transfer to a 9-inch pie dish without stretching.
  7. Trim edges, crimp, prick bottom with a fork, line with parchment, and fill with pie weights.
  8. Blind bake for 15 minutes, remove weights, and bake 5-10 more minutes until lightly golden. Let cool slightly.
  9. Reduce oven temperature to 350°F (175°C).
  10. Whisk sugars, spices, and salt in a large bowl. Add eggs and yolk, whisking until smooth.
  11. Stir in pumpkin puree, then slowly whisk in evaporated milk and heavy cream.
  12. Pour filling into the pre-baked crust.
  13. Bake for 50-60 minutes until edges are set but center jiggles slightly.
  14. Cool completely on a wire rack before slicing.

Notes

Keep all ingredients cold for the crust to ensure flakiness. Do not overwork the dough. Let the pie cool completely to allow the custard to set. Fresh pumpkin puree must be drained well to avoid a watery filling.
