  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 ½ cups chicken stock (low-sodium)
  • ½ cup heavy cream
  • 1 cup thawed frozen peas
  • 2 cups leftover turkey, chopped
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 packages pie crusts (or 1 double crust)
  • 1 egg beaten with 1 tablespoon water (for egg wash)
  • Sesame seeds (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and place a rack in the center position.
  2. Prepare the crusts by rolling out dough and cutting circles slightly larger than muffin tin cups. Press into cups, trim excess, and prick bottoms with a fork.
  3. In a large saucepan, melt butter over medium heat. Sauté onion, carrots, and celery for 5-7 minutes until softened. Add garlic and cook for 1 minute.
  4. Sprinkle flour over vegetables and stir constantly for 2 minutes to create a roux.
  5. Slowly whisk in chicken stock and heavy cream. Add bay leaf and stir well.
  6. Simmer the mixture for 5-7 minutes until thickened. Remove bay leaf, then stir in peas, thyme, salt, pepper, and chopped turkey. Remove from heat.
  7. Spoon the warm filling into prepared muffin cups, filling them about ¾ full.
  8. Place top crust circles on each pie, pinch edges to seal, and cut a small slit in the center for steam.
  9. Brush tops with egg wash and sprinkle with sesame seeds if desired.
  10. Bake for 20-25 minutes until crusts are golden brown and puffed.
  11. Let cool in the pan for 5 minutes before serving.

Notes

Ensure the roux is cooked for at least 2 minutes to remove raw flour taste. Do not overfill the pies to prevent bursting. If tops brown too quickly, cover loosely with foil. For a gluten-free option, use gluten-free crust and flour. For dairy-free, use coconut cream and olive oil.
