These crispy, shortbread-style cookies are shaped like witch’s fingers with almond nails, offering a spooky yet delicious Halloween treat that is quick to make and uses simple pantry ingredients.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 large egg, room temperature
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 24 whole raw almonds (for nails)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and sugar on medium speed until light and fluffy (2-3 minutes).
  4. Beat in the egg, almond extract, and vanilla extract until just combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix on low speed until a dough forms.
  6. Scoop about 1 tablespoon of dough and roll into a log shape, tapering one end to resemble a fingertip (3-4 inches long).
  7. Press a whole almond firmly into the tapered end of each dough log.
  8. Use the tip of a knife to gently score 2-3 lines into the dough to create knuckles.
  9. Optional: Refrigerate shaped cookies for 15-20 minutes to help them hold their shape.
  10. Bake for 12-15 minutes until edges are lightly golden brown.
  11. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Ensure butter is softened but not melted to prevent spreading. Do not overbake as cookies continue to cook on the hot pan. For a gluten-free version, use a 1:1 gluten-free flour blend. Almonds can be substituted with licorice or chocolate chips for nut-free options.
